Asiago Zucchini

I LOVE zucchini!

Recently, Jenna @ The Painted Apron, posted her version of Roasted Zucchini, which is quite similar to my recipe!  Great minds think alike!


This is a quick side dish....


...just slice the zucchini, lay it on parchment paper, sprinkle with seasoned salt and lemon pepper, then top with asiago cheese.  Bake it for 15 minutes at 400'


It can also be prepared like this: 


Sliced lengthwise and roasted for about 30 minutes @ 400':

Fruit Slushy


I made an alcoholic punch for a party recently and froze the leftover to make a "slushy".


It won't freeze all the way due to the alcohol!


Any wine or alcoholic punch recipe will do...


...this one had fruit juices, peach wine and vodka....


...I added a little peach wine to top off the slushy...

...or you could use 7-up!


And a "spoon straw" is a necessity with a slushy!!


It is delish on a hot summer eve!

La Mojito....


Every spring I make sure to buy a mint plant...


...I never plant it in the ground as mint is quite invasive and spreads too quickly.  

Mint is necessary for a perfect Mojito:




Mojito :
- 1 1/2 oz vodka
- 1 oz lime juice
- 1 1/2 tbsp sugar
- 5  raspberries (optional)
- 4 oz club soda
- 6 - 7  mint leaves



Tear up the mint leaves and add them to an old-fashioned glass containing the lime juice and sugar. Press the leaves with the back of a spoon against the glass to release the aroma. Add vodka. Fill the glass with ice cubes and top off with club soda. Add the raspberries (optional). Mix and serve in "Old-Fashioned Glass"

Tortilla Spirals....

These are a quick snack for last minute entertaining or for a picnic.

Simply take a tortilla (I like the "colored" ones, tomato, spinach, etc) and spread with a garden flavored cream cheese, Boursin cheese, or any cheese spread of your choice.  Sprinkle some veggies (minced green yellow or red pepper, minced carrots, chives) and roll up tightly and refrigerate.  Slice in 1/2"-1" and insert toothpick.


You can also make these heartier by adding shaved cold cut meats!

SUMMER has finally arrived!!


The June solstice is our signal to celebrate summer in the Northern Hemisphere. For us, this solstice marks the longest day of the year. Early dawns. Long days. Late sunsets. Short nights. The sun at its height each day, as it crosses the sky. Meanwhile, south of the equator, winter begins.

Need a refreshing cocktail?....

            Moscow Mules
This cocktail is very simple to make.

All you need is ginger beer, vodka and lime!


AND a copper mug:


Ginger beer is non-alcoholic (it has a hint of rosemary taste to me) and the "1911 vodka" is locally made (from Beak & Skiff apples).

Fruit Salad with Raspberry Viniagrette....

Here's a quick salad to make for lunch...


For a quick healthy lunch:
Fresh strawberries, mandarin oranges, blueberries on top of lettuce.
Toss with raspberry vinaigrette.
Adding chicken is even more delish!!

Veggie Salad....


Some call it Cowboy Caviar or Cowboy Salad, some call it Texas Caviar....I just call it Veggie Salad! 

And it couldn't be easier to make:

 Anything can be added or taken away from this, but this is how I like it:

1 can black beans
1 can corn
1 can green beans
1/2 green chopped pepper
1/2 red chopped pepper
1 cup chopped grape tomatoes
1/4 cup chopped red onion
1-1 1/2 c Italian dressing
Mix all together and marinate all night.
Serve as a side dish or with tortilla chips!

Some add black eyed peas, broccoli, or celery.... make it your own!

A Getaway to Cape Cod and Martha's Vineyard....


There is nothing like a "girlfriend getaway" and I recently spent some time on Cape Cod with old friends.


Well, we do not think we are "old" at all and could certainly keep up with any young'in we know!!

I spent a week in Sandwich and a few days out on the Vineyard!

I enjoyed walking the beaches in Sandwich and Falmouth...


...took many, many photos...
There was a little "drinking" going on....


....and a few days on Martha's Vineyard....



...lots of good food...


....lots of color and scents....





....and inspiration...



...morning walks out to the foggy beach by the Edgartown Lighthouse ...



...strolling around the gingerbread cottages in Oak Bluffs...


...a little spying on artist and author Susan Branch in Tisbury, but she wasn't home!...


...enjoying the lovely view from the Harborside Inn...



...and a little shopping at some of my favorite shops:



...it was tough to leave!


There is nothing like spending time by the ocean, and even more enjoyable spending it with great friends!
