Stuffed Pepper Soup...and cheery table setting....


I love soup!


So, today I made Stuffed Pepper Soup....


...it's much easier than making stuffed peppers, too....


...and a little sprinkle of cheese on top....


...makes it taste just as good as the real thing!


Stuffed Pepper Soup:
1 lb lean ground beef
1 lg onion, chopped
2 cloves garlic sliced thin
1 C uncooked rice
1 can diced tomatoes (14 oz)
1 can tomato sauce (14 oz)
1 32oz box chicken stock
2 C water
1 t oregano
1 t basil
1/2 t jalapeno salt
1/2 t seasoned pepper
1/2 crushed red pepper
2 T powdered beef stock
3 bell peppers, cut into large chunks
shredded cheddar for topping
In a lg soup pot brown the ground beef with garlic, onions and rice (browning the rice adds a nutty flavor).  Add tomatoes, sauce, stock, water and seasonings.  Bring to a boil and lower heat.  Add peppers and simmer for another 20-30 minutes.  Serve with cheese on top! Serves 6.



Serve with a salad and crusty bread!

  2. I love soup .. and this recipe look delicious.. not to mention that gorgeous yellow table setting..It almost makes me think it’s spring( ha Ha)..We still have 6 feet of snow , but at least the sun is shining ..that’s a big PLUS.. Have a HAPPY EASTER ...Hugs

  7. Yummy! This soup looks so good and I will definitely try it real soon. I love stuffed peppers but they can take time and this soup looks like a great replacement.

  10. What a great idea to get all of the flavors of stuffed peppers into a soup!
    Wow, the yellow tureen and bowls and placemats are stunning. Such a happy color. I have some daffodils coming up now and they bring this happy yellow into my life, but nothing like your dishes!
