Orange Barbecue Chicken


I am not a fan of barbecue sauce, however I recently found a mixture of jar sauce with orange marmalade that I love!!


The recipe was simple:
Fry a few T of chopped onion and a minced clove of garlic in a little butter, add 1 cup of BBQ sauce and 1 cup orange marmalade and simmer until mixed.  Marinade chicken in a some of the sauce for 2 hrs.  Brush the remaining sauce on chicken as it cooks on the grill!


It is so tasty!


And even better, use the leftovers for chicken salad:


I simply chopped up chicken, added red onion, celery, walnuts, cucumber, chives, a squirt of creamy bacon dressing and mayo!

  2. Patti this looks great. I love orange marmalade but I've never thought to use it with BBQ sauce and chicken. Yummy!
