Pineapple-Zucchini Bread


I love quick breads. My favorite is Banana and my second favorite is Pineapple-Zucchini:
I could eat the whole loaf - that's why I make 2
This recipe makes 2 loaves.
RECIPE
Ingredients:
3 eggs
1c oil
2c sugar
1T vanilla
2c grated zucchini
1t baking powder
1 t salt
1t baking soda
1T cinnamon
3c flour
1c chopped walnut
8 oz can crushed pineapple, drained
Beat the first 4 ingredients with electric mixer. Add all other ingredients and mix by hand. Bake in one bundt pan (1 hr 20 min) or 2 loaf pans (1 hour) at 350'

And did I ever tell you the story of my glass cake dome?
Here goes: This is the smaller M-C pedestal cake platter. I have the larger one, too. One day I was at a garage sale and the older man was selling a huge cake platter and dome. After some flirting friendly chatter, I talked him into selling me just the dome. It was perfect and just the fit for the larger platter.
I made my husband a cake before I went to the Cape in the spring and covered the cake with the dome. He ate the cake and while he was washing the dome cover, he banged it against the granite counter top. It cracked in many places. Needless to say it took him a few days to 'fess up.

I have been looking for a new one and just couldn't find one as large. Recently Hobby Lobby had this small cover in their sale section, so I grabbed it.

The moral:
No more large desserts for hubby in this house!

  1. Patti, nut breads are some of my favorites. I like them toasted with a bit of butter. ;-)
    Only glass dome I've had was a MacKenzie-Childs hand painted one for a cheese board. It broke long ago. Never have replaced it, just use the board. LOL Guess I should check out Hobby Lobby. ~ Sarah

  2. Sounds delicious - and moist. I can't even remember the last time I had pineapple zucchini bread. This recipe triggered memories of great bread from many years (decades?) ago. I'm going to give it a try and it's a great way to get the veggies :)
