Garlic Herb Potato Nests

To make these easy hors d'oeuvres, grate 2 potatoes and mix with 1 egg white and some salt and pepper. Press 1-2 T into small greased muffin tins, pressing down center and along the sides of tin. Bake about 10 minutes until golden and crispy.
Carefully lift each "nest" out and fill with a teaspoon of garlic herb spread:
and of course, serve with a glass of wine:
